TOFU THURSDAY

Tofu

Tofu history in China - Tofu is very popular in the Orient today. Tofu was first used in China over 2000 years ago. The oldest evidence of tofu production is a Chinese mural incised on stone slab. It shows a kitchen scene that proves that soy milk and tofu were being made in China during the period A.D. 25 - 220. The oldest written reference to tofu appeared also in China at about A.D. 1500, in a poem "Ode to Tofu" by Su Ping.
Tofu history in Japan - Kento priests, who went to China to study Buddhism,brought tofu back to Japan during the Nara era (710-794). Tofu was eaten as part of a vegetarian diet for priests for its protein content. The word "tofu" is first mentioned in Japan in the diary of the Shinto priest Nakaomi. Tofu was used as an offering at an altar. In 1489 the word "tofu" was first written in actual Japanese characters. Tofu gradually became popular amongst the nobility and the samurai class. During the Edo era (1603-1867), tofu became popular among ordinary people. The recipe book "Tofu Hyakuchin" was published in 1782 and sold very well.
Tofu history in the Western World - In 1603 the Spanish dictionary was the first European document with reference to the word "tofu". Dominog Fernandez de Navarrete described in his book, "A collection of voyages and travels", how tofu was made. The first English reference to tofu was in 1704, when Navarrete's book was published in English.

Tofu was first produced in France in Paillieux in 1880. Hirata and Co started to make tofu in San Francisco in 1895. The first Westerner who produced tofu on a commercial scale was T.A. Van Gundy in 1929 when he started the company La Sierra Industries in California.

Mexican Tofu Scramble
  • tofu, drained and crumbled
  • 1 tomato chopped
  • spring onions, chopped
  • cilantro, chopped
  • green chillies
  • chilli powder
  • cumin
  • paprika
  • tumeric powder
  • olive oil
  • salt

what to do;

  • cook veggies in olive oil for around 5 minutes
  • add crumbled tofu and seasonings, stir gently and cook for 15 minutes

Serve on rye or in a wrap together with homemade salsa. Also good sprinkled with some grated vegan cheese.

This yummy dish is very similar to scrambled eggs but much healthier.

  • broccoli, brussel sprouts, cabbage, beets, green pepper, lettuce, kale, 'shrooms, potatoes, spinach, zucchini, tomatoes, banana's, apples, strawberries, grapes, pumpkin/hemp/sesame/sunflower seeds, lentils, kidney beans, split peas, barley, millet, rice, oatmeal, rye, quinoa - the list is endless.

Bunch Of Parsley In Bucket

The lowdown on Parsley

Parsley is much more than just a colorful garnish. It rejuvenates and detoxifies the body. This herb is a huge powerhouse of vitamin c, iron, calcium, sodium, beta-carotene, manganese and chlorophyll.

I always keep a washed bunch of parsley in the fridge and nibble on it throughout the day. If you stand it in a jar of water and cover with a plastic bag it just lasts and lasts. It's also great to add to juices and smoothies.

This gorgeous dark green herb is an effective diuretic, helping to keep a healthy flow of urine and preventing urinary tract problems and kidney stones. And guess what? studies have shown that it is effective in slowing down the ageing process. Now there's a reason to eat it by the kilo! In addition it assists in lowering cholesterol, promotes good kidney health and cell detox.

Yummy Raw Broccoli Bell Salad

Let food be your medicine and medicine be your food -Hippocrates

  • 2 cups diced broccoli
  • 3 bell peppers, seeded and diced (red, yellow and green)
  • onion diced
  • 2 ears of corn cut off the cob
  • 2 celery stalks, diced
  • 1/2 cup goji berries or raisins
  • 1/4 cup sunflower seeds (walnuts are also good)

Combine all the above ingredients and drizzle with a lemon juice and olive oil dressing.

  • last night's dinner : potato, spinach, courgette, tomato and onion bake, baked butternut, corn on the cob and fab crunchy über-green salad
  • yesterday's South Easter - everyone has a bad hair day

Food 'n Mood

How we eat, think and exercise has a huge effect on our attitude, health, mood, energy levels and aging process.

Most of us know and believe the above and if we were to practice self-discipline we could all feel good most of the time. Yet, how often do we eat food that does not agree with us and then we pay the price for that 'pleasure'.

How often do we skip exercise and while making this decision we already know it will affect our whole day? Yet we still do it! Dang!!!!

Spring is a good time to start making promises to ourselves and to silence that inner voice that keeps saying "it's OK, just for today I will spoil myself and start again tomorrow" This does NOT work, as there is always a tomorrow .......

What are your goals? Are you taking care of your body the best way you can - consistently? Treat your body well - there are no replacements or upgrades.

Eat with intention and awareness and choose a simple exercise routine that you enjoy. Exercise is the perfect accompaniment to healthy eating.

Get creative with veggies. If you feel you need to eat protein such as meat, fish and chicken keep it to the size of the palm of your hand.

WEDNESDAY - NATIONAL BANDANA DAY:14 OCTOBER 2009

The Sunflower Fund was formed in 1999 and was inspired by Chris Corlett and Daren Serebro's heroic struggle against leukaemia. It was formed by parents whose children had contracted leukaemia, and in some cases had lost their battle against it. Their aim was to secure financial support in order to increase the number of bone marrow stem cell donors in South Africa.

Chris painted the original "Sunflowers of Hope" painting while in isolation and copies of this now hang in all the transplant units in South Africa, as well as one in New Zealand and Australia. Chris saw donors as 'seeds of hope' for patients suffering as he was - hence the name "Sunflowers of Hope".

"Sunflowers of Hope"was painted by Chris Corlett before his death. Others, in their days of darkness, have done the same. Let the sunflower be a tribute to all those that have not survived and a symbol of hope to all patients in the future. (Information courtesy of the Sunflower fund website)

Please make a point of purchasing a bandana. At a cost of R20- you will be bringing hope to many leukaemia patients. I have been buying bandanas ever since the inception and have a really cool collection.

My pups and I proudly wear the bandanas knowing that my small donation has made a huge difference.

Wednesday in the kitchen

Mesir W'et - Spicy Ethiopian Lentil Stew

Ingredients

  • 1 cup dried red lentils ( I guess any lentils will do)
  • 1 onion, chopped
  • 1-3 cloves of garlic, crushed
  • 1 small can of tomato paste
  • 2 cups veggie broth or water
  • 1 tablespoon paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 tablespoon berbere OR an additional tablespoon of paprika or cayenne pepper
  • sea salt to taste
  • ground black pepper to taste
  • oil for frying

Directions;

  • soak lentils for at least an hour in water
  • drain, rinse and set aside
  • sauté onions and garlic in oil until golden
  • add broth or water
  • add spices and tomato paste
  • when gently boiling add lentils
  • turn down heat and simmer until lentils are tender and it's a thick stew- adding more liquid if needed

Serve with rice, pita bread or rotis (wraps work well too)
