TOFU THURSDAY

Tofu

Tofu history in China - Tofu is very popular in the Orient today. Tofu was first used in China over 2000 years ago. The oldest evidence of tofu production is a Chinese mural incised on stone slab. It shows a kitchen scene that proves that soy milk and tofu were being made in China during the period A.D. 25 - 220. The oldest written reference to tofu appeared also in China at about A.D. 1500, in a poem "Ode to Tofu" by Su Ping.
Tofu history in Japan - Kento priests, who went to China to study Buddhism,brought tofu back to Japan during the Nara era (710-794). Tofu was eaten as part of a vegetarian diet for priests for its protein content. The word "tofu" is first mentioned in Japan in the diary of the Shinto priest Nakaomi. Tofu was used as an offering at an altar. In 1489 the word "tofu" was first written in actual Japanese characters. Tofu gradually became popular amongst the nobility and the samurai class. During the Edo era (1603-1867), tofu became popular among ordinary people. The recipe book "Tofu Hyakuchin" was published in 1782 and sold very well.
Tofu history in the Western World - In 1603 the Spanish dictionary was the first European document with reference to the word "tofu". Dominog Fernandez de Navarrete described in his book, "A collection of voyages and travels", how tofu was made. The first English reference to tofu was in 1704, when Navarrete's book was published in English.

Tofu was first produced in France in Paillieux in 1880. Hirata and Co started to make tofu in San Francisco in 1895. The first Westerner who produced tofu on a commercial scale was T.A. Van Gundy in 1929 when he started the company La Sierra Industries in California.

Mexican Tofu Scramble
  • tofu, drained and crumbled
  • 1 tomato chopped
  • spring onions, chopped
  • cilantro, chopped
  • green chillies
  • chilli powder
  • cumin
  • paprika
  • tumeric powder
  • olive oil
  • salt

what to do;

  • cook veggies in olive oil for around 5 minutes
  • add crumbled tofu and seasonings, stir gently and cook for 15 minutes

Serve on rye or in a wrap together with homemade salsa. Also good sprinkled with some grated vegan cheese.

This yummy dish is very similar to scrambled eggs but much healthier.

  • broccoli, brussel sprouts, cabbage, beets, green pepper, lettuce, kale, 'shrooms, potatoes, spinach, zucchini, tomatoes, banana's, apples, strawberries, grapes, pumpkin/hemp/sesame/sunflower seeds, lentils, kidney beans, split peas, barley, millet, rice, oatmeal, rye, quinoa - the list is endless.

ODE TO 2009

2009 is almost history, and inevitably I sit and wonder whether this year will be remembered by the generation who follow in our footsteps.

The world has lost Michael Jackson, a music legend.

8 December 2009 marked 29 years since John Lennon was shot and killed outside his apartment in Manhatten. This very same day also marked 40 years since John Lennon and Yoko Ono launched their ' War is Over' campaign.

We were shocked by confessions of celebrities and our own rugby hero. Through this I again realized and accepted that I too am far from perfect.

As I crawl, often frustrated, through the maze of unfinished roadworks, I stand in awe with pride when I look at our very own 2010 stadium and think of the other 2010 developments in our City and sprinkled across South Africa. In my heart I know that we will show the world that we can make a success of the 2010 FIFA World Cup.

Our family attended Rudi's celebration of Life. A special cousin, who taught us all how to live in the moment.

Morgan joined our family, which makes me a great aunt x 2 and Kent celebrated his third birthday. Our Papa moved in with me, which brought new responsibilities - no more popcorn for dinner.

My two wonderful nephews, who are both awesome young men, go from strength to strength. Simon continues to manage a thriving pub in Brighton and Pete is a Director at his company. I wear the aunt badge with goosebump inducing pride.

As I sit here I suddenly realize that, this year, I have passed two cancer tests with flying colours, I am fast heading towards my 3rd cancerversary on 15 January 2010 and my 50th birthday follows shortly afterwards on 31 January 2010. If anyone would have presented me with this picture 3yrs ago I would have never believed is possible. This is a true 'cosmic-wink'.

I continued with my quest of educating myself on all things foodie/healthy and fill my life with healthy habits such as yoga, meditation, beach walks, etc.

I bought a camera and now consider myself a photographer in training.

I started this blog to share my 'good-health' passion and tweet with tweople all over the globe.

I explored our wonderful City and surrounds and met many new colourful people, who crossed my path and truly enriched my life. I made a new best friend. We are soul-sisters and definitely have a connection from past lives.

I continued to wade through many books and explored words like soul, divine, spirituality, inner power, thoughts become things, Buddha, God, etc.

It was again confirmed to me that I have a personal team of Guardian Angels, who are working directly with me to keep me safe, healthy and on track with my soul's karma and purpose. With their help I have no reason to feel lost, afraid or concerned.

And, as we head towards our Papa's 90th birthday and 'the greatest showpiece on earth' I know that 2010 will 'rock' for our family. I have found my true self, my divine spark - I feel gutsy, healthier than ever, powerful, playful and ready to meet my chunk of 2010 head on.

CANCER'S PREFERRED FUEL

Many cancer patients would have a major improvement in their conditions if they controlled the supply o f cancer's preferred fuel : Glucose. By slowing the cancer's growth, patients make it possible for their immune systems to catch up to the disease. Controlling blood-glucose levels through diet, exercise, supplements and meditation can be one of the most crucial components to a cancer treatment programme/lifestyle.

German Otto Warburg, Ph.D., the 1931 Nobel Laureate in medicine, first discovered that cancer cells have fundamentally different energy metabolism compared to healthy cells. The gist of his Nobel thesis was this : malignant tumours frequently exhibit an increase in "anaerobic glycolysis" - a process whereby glucose is used by cancer cells as a fuel with lactic acid as an anaerobic by-product. The large amount of lactic acid produced by this fermentation of glucose from the cancer cells is then transported to the liver. This conversion of glucose to lactate creates a lower, more acidic PH in cancerous tissues as well as overall physical fatigue from lactic acid build-up. Therefore, larger tumours tend to exhibit a more acidic PH.

Hence, it is important to attempt to regulate blood-glucose levels through diet, weight control and stress reduction. Since cancer cells derive most of their energy from anaerobic glycolysis, the goal is not to eliminate sugars or carbohydrates entirely but rather to control blood-glucose to help starve the cancer cells and boost the immune system.

Braised Cabbage and Basmati
  • chop cabbage and braise together with onion, garlic and chilli in olive oil, add a little water if necessary, (I added some white wine)
  • cook covered for 10 minutes, add salt and pepper and cook uncovered for 20 minutes stirring every 5 minutes,
  • boil rice in veggie stock,
  • add cabbage to cooked rice and mix thoroughly.

This was delicious with a tomato and cuke salad and steamed carrots and squash.

Bestest and Quickest Ever Spaghetti Recipe (a Jamie Oliver 'amended' recipe)

  • spaghetti
  • onion, garlic, chilli, olives, tomatoes, fresh basil
  • balsamic vinegar
  • olive oil
  • salt and pepper

what to do;

  • finely chop onion, garlic, chilli and de-pip olives
  • add squashed baby tomatoes and torn basil leaves
  • salt and black pepper
  • mix all the above ingredients in a huge bowl
  • once cooked add the hot spaghetti, olive oil and balsamic vinegar and mix thoroughly

add a crunchy green salad and ENJOY!!!

I think this is such a delicious dish because the ingredients are not cooked, just slightly wilted by the hot pasta - it is fresh and yummy. Also good cold as a salad.

THE LATEST FROM THE AMERICAN CANCER SOCIETY

One third of the more than 500 000 cancer deaths in the US ear year are attributable to diet and physical activity habits, such as being overweight or obese. That's about the same number of cancer deaths caused by tobacco.

Researchers are now saying that the latest/new cancer prevention guidelines emphasize maintaining a healthy weight throughout life as the best thing you can do to reduce your risk of cancer.

  • Engage in at least 30 minutes of moderate to vigorous physical activity on 5 or more days per week.
  • Follow a healthy diet, with an emphasis on plant-based foods.
  • Eat five or more servings of a variety of vegetables and fruits each day.
  • Choose whole grains over processed or refined grains.
  • Limit consumption of processed and red meats.
  • Limit alcohol intake.

In addition, the new guidelines call on communities to take a more active role in encouraging healthy behaviours, by increasing access to healthful foods in schools and workplaces as well as providing safe and enjoyable sidewalks and recreational facilities.

Kitchen Gems;

  • if you don't put the lid on when steaming green veggies they stay greener
  • when cooking cabbage add a bay leaf, this will reduce the smell during cooking and also give a subtle flavour
  • if you need to keep peeled potatoes, put them in water and then place a slice of bread over the top - this stops them from going brown
  • add Worcester Sauce to baked beans for extra zing

  • 1 cup oats
  • 2 cups water
  • salt

what to do;

  • simmer slowly for 15 minutes (do not use quick-cook oats)
  • top with goji berries, raisins and cinnamon
  • if you like it sweet drizzle with honey
  • I also sprinkle organic Hemp Protein Protein Powder over my oats, gives it a yummy nutty flavour

why are oats healthy;

  • the complex carbs in oats allow for a slower release of blood sugars and oats are safe for those who are gluten intolerant

FOOD ADDITIVES

Nutrition experts claim that the more natural foods you eat the healthier you will be. What does this mean? Well, you need to cut out foods that are processed, don't contain chemicals, preservatives, fillers, artificial flavors or artificial colours.

Foods to avoid;
  • diet foods - reduced sugar foods and beverages are loaded with highly processed/chemical substitutes,
  • reduced fat foods have a lot of added sugars,
  • fast foods - loaded with additives and unhealthy fats,
  • any food that is tinned or packaged contain fillers and preservatives,
  • refined sugar and sweetened food - candy, soda, cakes, anything baked, the list is endless,
  • fried foods contain saturated and trans fats.

Why are additives bad?

  • they are linked to allergic reactions, fatigue, skin rashes, hyperactivity, headaches, thyroid problems, asthma, cancer, hallucinations, bad cholesterol, increased risk for type-2 diabetes, coronary heart disease, stroke, kidney problems and the list goes on and on ............

Toasted Pearl Barley Risotto

  • 250ml pearl barley, washed and well drained
  • onion, chopped
  • olive oil
  • 1L vegetable stock
  • finely chopped parsley

What to do;

  • fry barley over medium heat until the grains become fairly dark (be brave!)
  • in another pan saute onion until soft
  • add the barley and stock and simmer until the grains are tender but firm, around 40 mins
  • add parsley

A delish alternative;

  • add chopped tomatoes at the beginning of cooking, stir in chopped basil at the end of cooking together with grated Parmesan cheese just before serving,
  • also, good served with a dollop of your fave Pesto,
  • or add slivered olives and fresh oregano.

Good as a main meal or as a side dish.

HAPPY BODHI DAY

Bodhi Day, traditionally the 8th day of the 12th lunar month, has been observed on December 8 in Japan since the Meiji Restoration (1862-1869). It is the Buddhist holiday that commemorates the day that the historical Buddha, Shakyamuni or Siddhartha Gautauma, experienced enlightenment, also known as Bodhi in Sanskrit. According to tradition, Siddhartha had recently forsaken years of extreme ascetic practices and resolved to sit under a Pupul tree and simply meditate until he found the root of suffering, and how to liberate oneself from it.

All traditions agree that as the Morning Star rose in the sky in the early morning, the third watch of the night, Siddhartha finally found the answers he sought and became Enlightened, and experienced Nirvana. Having done so, Siddhartha now became a Buddha or ' Awakened One'.

The Buddha describes his enlightenment in three stages;
  • During the first watch of the night, the Buddha discovered all of his past lives in the cycle of rebirth, realizing that he had been born and reborn countless times before.
  • During the second watch, the Buddha discovered the Law of Karma, and the importance of living by the Eightfold Path.
  • During the third watch, the Buddha discovered the Four Noble Truths, finally reaching Nirvana. In his words : "My heart, thus knowing, thus seeing, was released from the fermentation of sensuality, released from the fermentation of becoming, released from the fermentation of ignorance. With release, there was the knowledge, ' released'. I discerned that birth is ended, the holy life fulfilled, the task done. There is nothing further for this world."

Butternut and Potato Roast

  • sliced butternut (unpeeled)
  • potatoes, cut into quarters
  • olive oil
  • chopped thyme
  • garlic, crushed
  • garam masala
  • salt
  • cinnamon, ground
  • soft brown sugar or honey

what to do;

  • combine into a marinade the olive oil, thyme, garlic, garam masala and salt
  • add butternut and potatoes and toss.
  • place into greased ovenproof dish and pour any remaining marinade over.
  • sprinkle the cinnamon over the butternut slices and then drizzle the honey or brown sugar over these.
  • bake until golden and crisp

also delish if you add;

  • halved onions, cloves of garlic in their 'pyjamas', cherry tomatoes.

NON-LASAGNE LASAGNE

Most pasta is made with wheat flour, but you can make a healthy gluten-free lasagne by substituting veggies for the pasta. Also a good thing for the waistline if you want to look cute during the' hellidays'.

What to do;
  • slice some aubergines, courgettes and Portobello mushrooms lengthwise to make long strips.
  • lay the strips on a baking sheet and brush with olive oil
  • sprinkle salt over the veggies
  • bake until slightly brown
  • now layer the veggies with the lasagne sauce where you would normally layer the pasta sheets
  • Yum with loads of salads.

A gluten experiment

Gluten is extremely difficult to digest and is a common food allergy that many people don't even know they have.

Take some bread flour and add enough water to be able to knead it into a ball of dough. Now take this dough and hold it under running tap water while you work with it in your hands. Milky water will flow out of it. This is the carbohydrate starch leaving the dough. After a few minutes, you will be left with an extremely sticky gluey mass. This is the gluten that is in the wheat. Now ...... imagine your digestive enzymes trying to break this down.

Physiological Comparisons between meat-eater/herbivore and man

Meat eater - has claws, no skin pores and perspires through the tongue, sharp front teeth for tearing, no flat molar teeth for grinding, intestinal tract 3 times body length so rapidly decaying meat can pass out quickly, strong hydrochloric acid in stomach to digest the meat.

Herbivore - no claws, perspires through skin pores, no sharp front teeth has flat rear molars, intestinal tract 10-12 times body length, stomach acid 20 times less strong than meat-eaters.

Man - no claws, perspires through skin pores, no sharp front teeth has flat rear molars, intestinal tract 12 times body length, stomach acid 20 times less strong than meat-eaters.

It's obvious which category we fall into.

NATURAL SLEEP REMEDIES

There is an entire industry devoted to the issue of sleeping disorders offering both drugs and natural sleep aids to allow you to rest in order to maintain good health.
Sleep-easy tips
  • sleep in a cool room with proper ventilation for fresh air
  • ensure the room and surrounds are quiet
  • do not use caffeine, alcohol or eat heavy spicy foods for several hours before going to bed
  • try to go to bed at roughly the same time every day
  • exercise daily
  • avoid using the bedroom as an office or work area
  • ensure you get enough sunlight to maintain proper circadian rhythms which are necessary for sleep
  • do not fight the need to sleep - if you are tired rest
  • use rhythmic breathing or other meditative techniques to help fall asleep

These natural substances can assist;

  • Valerian Root - a calming herb used as a natural sedative
  • Chamomile - another herb used for relaxation
  • Kava - used to promote muscle relaxation and aids sleep
  • Tryptopham - an amino acid precursor to Seratonin and Melatonin, which are both involved in sleep

Sleep is extremely important and a lack thereof can lead to problems ranging from difficulties with simple tasks to weakened immune function.

Last night's carrot bake

  • steam and mash carrots (leave them still slightly chunky and rustic looking)
  • chop onion, garlic, green/red/yellow peppers and chilli
  • mix all the above ingredients and add salt 'n pepper
  • transfer to a baking dish and cover with seasoned breadcrumbs and nutritional yeast
  • bake until the topping is crunchy and enjoy together with boiled baby potatoes dunked in basil pesto........................ and a crunchy cabbage salad.

Today I am grateful for;

  • one day closer to Christmas holidays
  • my brother and Kathy returning from their holiday - back home - Yay!
  • looking forward to Mish's birthday picnic bash at Kirstenbosch tomorrow
  • my 'whopping' good health
  • FIFA 2010 draw - looking forward to the excitement this evening. Cape Town has been buzzing all week with Celebs

HOW TO SURVIVE THE SILLY SEASON

My silly season rules
  • take care of yourself
  • avoid erratic sleep routines
  • create an oasis of inner silence - meditate
  • swim lots
  • walk instead of driving
  • only participate in holiday activities that really hold joy and meaning for you
  • no multi-tasking
  • hide the laptop
  • do creative stuff - my camera will be working overtime
  • spend time with people you love
  • the Buddhist practice of "right speach" is a useful tool - before you speak ask yourself these three questions: is what I am about to say true? Is it necessary? Is it kind?
  • spend less time in the kitchen and more time outdoors
  • no holiday shopping - stay away from Malls
  • burn candles instead of using electricity
  • drink loads of water and champagne
  • commit to less
  • laugh lots
  • search for garden-fairies
  • hug the pups
  • picnic under a shady tree
  • walk barefoot

Powerful Pesto

  • 16 brazil nuts, 30g sunflower seeds, 35g pumpkin seeds, 1 clove of garlic, 1 bunch Italian flat leaf parsley, 1 bunch basil leaves, 75ml extra virgin olive oil, 1 tablespoon lemon juice, salt

Process nuts and seeds in food processor, ad parsley, basil, lemon juice, salt and olive oil. Add some water to thin out.

This freezes well and is yummy with pasta, jacket potatoes, grain salads or stuffed into celery sticks.

Contains loads of good anti-oxidants such as Selenium and Vitamin E and minerals such as magnesium and zink.

Deslish 'n quick 'n tastie 'n powerfully healthy ................

Lemons grow in abundance in India, Sri Lanka, Malaysia, Mexico and the West Indies. Ayurveda regards lemon as a valuable fruit. Lemon is sour, warm, a promoter of gastric fire, light, good for the vision, pungent and astringent. It checks the excessive flow of bile and cleanses the mouth. It prevents vomiting, throat trouble, acidity and rheumatism.

Though lemon is acidic in taste, it leaves off alkaline residues in the body. This is why it is useful in all symptoms of acidosis.

It also contains vitamin A, vitamin C, vitamin P, niacin and thiamin.

The body is well cleansed if lemon juice and water is taken on an empty stomach early in the morning.

Lemon also contains more potassium than apples or grapes, which is very beneficial to the heart. In addition to this the vitamin C content of lemon helps considerably in calcium metabolism - therefore good for our bones.

Last night's yummy potato dish;

  • potatoes, thinly sliced (with the skin)
  • onions, sliced
  • balsamic vinegar
  • fresh thyme
  • salt and pepper
  • olive oil

what to do;

  • parboil potatoes
  • slowly fry onions in olive oil together with fresh thyme until onions are golden and soft
  • add balsamic vinegar to onions and simmer until vinegar is absorbed
  • layer half of the potatoes in a baking dish add salt and pepper
  • add onion mixture
  • top with remaining potatoes add salt and pepper
  • ' squelsh ' the mixture
  • drizzle olive oil over the top
  • bake for 30 minutes
  • EAT together with a green, crunchy salad and steamed butternut.

SHINY GLOWING RED PEPPERS

Christopher Columbus discovered sweet peppers on his travels in the New World. He thought he could make a fortune importing this delish veggie BUT sweet peppers grew fine in their new, Mediterranean home.

When young, sweet peppers or bell peppers are green. There are also yellow, orange, purple and brown varieties. Red peppers are actually green peppers left to ripen on the vine for a longer period of time. The sweetest peppers are red, yellow and orange, while green and purple peppers have a more tart flavour.

Peppers are full of vitamins and BONUS consist mostly of water so are low in calories.

Picking a pepper : Look for smooth, firm flesh that has a rich colour and no shriveled or soft spots. Avoid peppers with a hefty feel - this usually means they are full of seeds.

Pepper partners : Sweet peppers taste great with eggplant, tomatoes, summer squash, onions, garlic and corn. Other good flavour partners include basil, marjoram, olives, mozzarella, goat cheese, Parmesan and capers.

Yummy roasted red peppers

  • red bell peppers
  • olive oil
  • garlic cloves
  • chopped parsley
  • salt and pepper

What to do;

Roast peppers until they have blackened spots, blisters and are tender. Place into a plastic bag and set aside to cool. Once cool remove the skin and seeds. Cut into strips. In a glass jar combine salt, pepper,olive oil, garlic and parsley. Add peppers and store in the fridge.

Great on pizza's, salads, in wraps or as a snack with a cheese platter.

CHOLESTEROL KICKING CAYENNE PEPPER

Cayenne Pepper hotness scale 8 - 9.

Cayenne pepper takes its name from its supposed centre of origin - the Cayenne region of French Guiana. It is now grown largely in India, East Africa, Mexico and the United States.

Cayenne is made from the ripened fruit, varying from red to yellow. The powder is red or red-brown in colour.

Cayenne pepper assists in reducing blood cholesterol. In fact, cultures who consume large amounts of Cayenne pepper have a much lower rate of cardiovascular disease. It is a traditional, as well as modern, remedy for rheumatic pains and arthritis due to what is termed as a "counterirritant"effect. This wonder-spice contains vitamin C, flavonoids, beta-carotene, capsanthine and capsaicin. It can "rev up"metabolism and aid in weight loss. Cayenne also improves circulation.

Add a pinch to lemon juice and water first thing in the morning to give your day some ooooomph!!!

So simple to be healthy;

  • tuck in and get your 8 hours of zzz's a night
  • laugh lots, it's also great for ab-toning

Quick 'n yummy fried rice;

Fry onions, red chilli and garlic in olive oil. Add frozen mixed veggies and sauté until cooked but still crispy. Add cooked rice, salt and pepper and fry for a few minutes. This was delicious with baked tomatoes (topped with fresh organic basil from the garden), baked butternut and steamed caulie.

WEEKLY SHOPPING LIST

Here's a good standard shopping list to use as a guide.

This will stop you from breezing down the 'danger-aisles'.

  • broccoli, cauliflower, kale, cabbage, bok choy, brussels sprouts
  • brazil nuts
  • flaxseeds or flax oil
  • apples, bananas, oranges, berries, grapes, etc
  • garlic
  • green tea
  • olive oil
  • sesami oil
  • stevia
  • turmeric
  • asparagus, beets, spinach, sweet potatoes, green beans, butternut, etc
  • wakame seaweed
  • brown rice, quinoa, barley, beans, lentils, etc

Spinach and red speckled kidney beans

Cook a tomato sauce as a base. I used tomatoes, garlic, chilli, onion and green peppers. Once the sauce has reduced to a nice thick consistency add the pre-cooked beans and simmer for around 10 minutes. Add salt and pepper. Just before serving stir through the chopped spinach.

Delish served in a wrap or on toasted rye with a pink cabbage salad.

Pink Cabbage salad

  • white cabbage, chopped
  • red cabbage, chopped
  • onion, chopped

Mix all the above ingredients, add salt and pepper, lemon juice and olive oil.

INVIGORATING WEDNESDAY

Dry-skin brushing is very beneficial for the lymph systems. It removes dead cells and helps keep your 'temple' glowing.

Dry-skin brush for around 3 minutes in the mornings before you shower. This will stimulate circulation and reduces the appearance of cellulite.

How; you will need a natural bristle or plant-fibre long-handled brush. Start at the soles of your feet and working your way up your body always brush in the direction of the heart.

Then take a shower and smother yourself in body lotion or organic coconut oil.

Yummy red cabbage recipe

  • onions
  • red cabbage
  • veggie stock
  • wine
  • flour
  • olive oil
  • Himalayan salt

what to do;

Sauté onions in olive oil, add chopped cabbage, a glass of white wine, veggie stock and salt. Simmer for 30 minutes until the cabbage is cooked. Add a spoon of flour to thicken the gravy.

This was delicious together with green beans, carrots and 'shrooms lightly sautéd with onions in a little veggie broth. Add a huge salad and you have a healthy meal.

COOL AS A CUKE

Cukes are a good source of fiber and contain vitamin C, potassium, folate, B-complex and amino acids. The skin of the cuke contains vitamin A and silica. Silica strengthens the connective tissue that keeps us from falling apart. Tendons, muscles, bones, cartilage, ligaments and the skin ..... they all love silica.

Cukes are great to juice and are an excellent alkalizer and they normalize blood pressure.

Dive into this low calorie fruit (yep! like bell peppers cukes are actually fruits) and watch your complexion GLOW!

Cuke 'n Fennel Salad

  • 2 cukes,chopped
  • 1 fennel bulb
  • 1 small red onion, diced
  • 2 tomatoes, chopped
  • 1/2 cup flat leaf parsley -chopped
  • hearts of romaine

What to do;

shave fennel and then julienne into thin slices. Mix all the ingredients and dress with lemon/olive oil dressing. Place on a bed of romaine hearts and tuck in.

Lazy-chicks veggie bake (part of last night's dinner)

  • caulie and broccoli florets
  • carrots, diced
  • onions
  • mixed herbs
  • olive oil
  • Himalayan salt

Toss all veggies and seasoning in olive oil and bake for 30 minutes. This was delicious with fried rice.

Today, try some cart-wheels, put on your pink wellies and take a walk in the summer showers .....
